Let’s just talk about how much fun snacking is. Especially when your snacks are the perfect little taco in sweet potato slider form. I mean, how good does that sound!? Not only are these little bites fun, but they are SO easy! Sweet potato sliders are perfect for easy weekend treats and the best kind of appetizer to bring to a party!
I even ate them as a dinner once. Sometimes I wish people could see me while I cook, well.. maybe not. When I make something I love I end up dancing, singing (which really happens the whole time I’m cooking) and hurrying to take photos so I can eat every ounce of what I just made. You know, the type of eating that makes you get food all of your face, because what’s eating unless you’re messy.
Food is made to be fun and that means get messy, friends!!!
I’m sitting here scarfing them down watching the bachelor finale – WHERE’S THE WINE WHEN YOU NEED IT!?
I haven’t had wine in almost 6 months. I haven’t really worked out for the wedding yet and we’re just under 70 days so thank God cutting alcohol out makes you lose weight, amIright?! BUT right now, watching this overly dramatic tv show and snacking all night makes me really want it. GOALS, keep my goals in mind!!
At least I can eat as many sweet potato sliders as I want and feel awesome tomorrow. I actually haven’t even watched any of this season of the bachelor but something about the finale makes you so excited! The ring, the islands, the drama – oh the drama!
OK back to food. Have you ever used avocado oil!? I’m so obsessed with Primal Kitchen’s avocado oil! I tossed these sweet potato sliders in it and they came out PERFECT! So get your grub on my foodie friends and made some snacks!
You’ll be obsessed.
- 1 large sweet potato
- 1 tbsp olive oil or avocado oil
- 1 cup cooked ground grassfed beef
- 2 tbsp diced bacon
- 1 avocado
- 1 tsp lime juice
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt and pepper to taste
- Preheat oven to 375 degrees
- Slice the sweet potato about 1/4 inch thick, place into a bowl and add olive or avocado oil and coat completely
- Cover a baking sheet with parchment paper and place sweet potato in one flat layer
- Bake for 20 minutes, remove from oven
- In small bowl smash avocado, lime juice and salt to taste
- Top each piece of sweet potato with cooked beef, avocado and bacon
